Grilled Turkey Legs

       Spinach and Lentil Soup
  
INGREDIENTS (Nutrition)

60 g uncooked white rice
160 ml water
5 ml vegetable oil
115 g turkey kielbasa, chopped
1 onion, minced
1 carrot, chopped
2 g crushed red pepper flakes
1420 ml water
475 ml reduced sodium chicken broth
190 g dry lentils
1 (10 ounce) bag fresh spinach, torn

PREP TIME 15 Min
COOK TIME 35 Min
READY IN 50 Min

DIRECTIONS:

1) In a pot, bring the rice and water to a boil. Reduce heat to low, cover, and simmer 20 minutes.

2) Heat the oil in a large pot over medium heat, and cook the turkey kielbasa until lightly browned. Mix in onion and carrot, and season with red pepper. Cook and stir until tender. Pour in the water and broth, and mix in lentils. Bring to a boil, reduce heat to low, and simmer 25 minutes.

3) Stir the cooked rice and spinach into the soup, and continue cooking 5 minutes before serving.

          Raspberry Chicken Salad


INGREDIENTS (Nutrition)

1 chicken breast, skinned
Sea salt and pepper
2 (5 ounce) bags prepared mixed greens
355 ml Newman's Own® Lighten Up® Raspberry & Walnut Salad Dressing
336 g oranges, peeled and sliced
1 pink grapefruit, peeled and sectioned
1 avocado, halved, seeded, peeled and sliced
2 green onions, thinly sliced
Fresh red raspberries

PREP TIME 15 Min
COOK TIME 10 Min
READY IN 25 Min


DIRECTIONS:

1) Rinse and trim chicken breast. Grill on each side 5 to 7 minutes and remove from heat. Let stand for 5 minutes then slice into strips. Salt and pepper to taste.

2) Rinse and dry mixed lettuces and place in a large bowl along with green onion. Lightly dress with Raspberry & Walnut Salad Dressing, and arrange lettuces on dinner plates.

3)Arrange orange and grapefruit sections, avocado and onion slices, and chicken on top of lettuce. Drizzle additional Raspberry & Walnut Salad Dressing to taste.

4)Garnish with fresh raspberries.

              Grilled Turkey Legs

 
INGREDIENTS (Nutrition)

1 (2 liter) bottle lemon-lime flavored carbonated beverage
25 g sugar
30 ml hot sauce
9 g crushed red pepper flakes
6 g black pepper
1 large sweet onion, sliced
4 turkey legs
30 ml honey
10 g steak seasoning


PREP TIME 25 Min
COOK TIME 50 Min
READY IN 1 Hr 15 Min


DIRECTIONS

1) Preheat an outdoor grill for high heat, and lightly oil grate.

2) In a large pot, mix the lemon-lime flavored carbonated beverage, sugar, hot sauce, red pepper, pepper, and onion. Place the turkey legs in the mixture, and bring to a boil. Cook 30 to 45 minutes, until the turkey has reached an internal temperature of 180 degrees F (80 degrees C).

3) Remove onion slices from the mixture, and arrange on the prepared grill. Place turkey legs over the onions. Drizzle with honey, and season with steak seasoning. Cook, tuning once, 20 minutes, or until a crisp browned crust has formed on the turkey legs.

Serves 6.
